What To Do:

1. Chicken may arrive slightly frozen. Thaw as needed.

2. Prep Ingredients: Grate zest and squeeze juice from orange. Chop parsley.

3. Cook Carrots: Preheat oven to 425°F. Line a baking tray with aluminum foil, and coat with cooking spray. Place carrots on prepared pan. Toss with honey, ONLY 1 packet balsamic vinegar, and 1 tablespoon olive oil. Sprinkle with ½ teaspoon each salt and pepper. Bake 20 to 25 minutes, tossing occasionally, until browned and tender.

4. Make Compote: Heat 2 teaspoons olive oil in a small saucepan. Add onion. Sauté 3 minutes or until tender. Stir in ginger, orange zest, orange juice, cranberries, remaining packet balsamic vinegar, and ½ cup water. Bring to a boil. Reduce heat and simmer 5 minutes or until cranberries soften and mixture thickens. Stir parsley into compote (reserve some for garnish, if desired).

5. Cook Chicken: Heat 1 tablespoon olive oil in a large skillet. Sprinkle chicken with salt and pepper. Cook chicken 4 to 5 minutes on each side or until done.

To Serve: Divide chicken and carrots evenly between 4 serving plates. Top chicken with compote and sprinkle with parsley.

Pro Tip:

The compote is also great topping for pork or a spread for a turkey sandwich.
Spice it Up!: Add some heat to the compote by stirring in 1/4 teaspoon crushed red pepper.
