What To Do:

1. Preheat oven to 450°F. Line a baking tray with foil and coat with cooking spray.

2. Prep Chicken: Place chicken in an even layer in a zip top bag and pound with a rolling pin or something heavy until an even thickness. Brush one side of each piece of chicken with mayonnaise; sprinkle with teaspoon salt.

3. Dredge Chicken: Place panko on a plate; dip mayonnaise-coated sides in panko. Turn and repeat process with mayonnaise, salt, pepper, and panko. Place chicken on prepared baking tray. Coat with cooking spray. Bake 8 minutes or until almost done. Increase oven temperature to broil. Broil 2 minutes or until panko is browned and crisp.

4. Sauté Cabbage and Apples: While chicken bakes, in a large nonstick skillet, heat 1 tablespoon canola oil. Add apples, cabbage, vinegar, brown sugar, coriander, ½ teaspoon salt and ½ teaspoon pepper, and 1/4 cup water. Cook until tender (about 5 minutes).

5. Finish Cabbage and Apples: Chop parsley and stir in all but 2 tablespoons (save the rest for garnish).

To Serve: Divide chicken and cabbage among 2 serving plates. Garnish with reserved parsley.
