What To Do:
1. Preheat oven to 450°F. Line a baking tray with foil and coat with cooking spray.
2. Prep Chicken: Place chicken in an even layer in a zip top bag and pound with a rolling pin or something heavy until an even thickness. Brush one side of each piece of chicken with mayonnaise; sprinkle with teaspoon salt.
3. Dredge Chicken: Place panko on a plate; dip mayonnaise-coated sides in panko. Turn and repeat process with mayonnaise, salt, pepper, and panko. Place chicken on prepared baking tray. Coat with cooking spray. Bake 8 minutes or until almost done. Increase oven temperature to broil. Broil 2 minutes or until panko is browned and crisp.
