What To Do:

1. Preheat oven to 450°F. Line a rimmed baking sheet with aluminum foil and coat with cooking spray.

2. Cook Rice: In a medium saucepan over high heat, bring 1¼ cups water and ¼ teaspoon salt to a boil. Stir in jasmine rice and return to a boil. Reduce heat to low, then cover and simmer for 15 minutes. Turn off heat and let stand, covered, for 5 minutes.

3. Make Rub: Stir together brown sugar, chili powder, paprika, and cumin in a small bowl.

4. Prepare Salmon: Sprinkle salmon with ¼ teaspoon each salt and pepper. Rub with brown sugar mixture, pressing to coat. Place on one side of prepared baking sheet.

5. Prepare Green Beans: On other side of prepared baking sheet, toss green beans with 1 tablespoon olive oil, garlic, and ¼ teaspoon each salt and pepper

6. Bake salmon and green beans 7 to 9 minutes or until salmon flakes with a fork and green beans are tender.

7. Make Pineapple Relish: Finely chop pineapple, chop onion, and chop the cilantro. Heat 2 teaspoons olive oil in a medium skillet over medium-high heat. Add onion and pineapple. Sauté 5 minutes or until caramelized. Stir in cilantro and salt and pepper to taste.

To Serve: Divide rice, salmon, and green beans evenly between two serving plates. Season with salt and pepper to taste. Top salmon with pineapple relish.

Pro Tip:

Don’t stir the pineapple constantly when cooking to allow ultimate caramelization.
