What To Do:
1. Chicken may arrive slightly frozen. Thaw as needed.
2. Make Barbecue Sauce: In a medium saucepan, heat 1 tablespoon olive oil over medium heat. Add onion and ONLY half of garlic. Sauté 3 minutes or until onion is tender. Add crushed tomatoes, brown sugar, soy sauce, tomato paste, mustard and ¼ teaspoon each salt and pepper. Simmer 6 minutes or until sauce is thickened. Set half of sauce aside for serving.
3. Grill Chicken: Heat a grill pan over medium-high heat. Rub chicken with 2 tablespoons olive oil and sprinkle with ½ teaspoon each salt and pepper. Grill 5 minutes on one side. Turn and spoon remaining half of sauce over chicken. Cook 4 minutes longer or until chicken is done.
