What To Do:

1. Make stock: Whisk together chicken stock concentrate and 1 cup water.

2. Prepare slow cooker:Coat a 3-to 4-quart slow cooker with vegetable cooking spray. Place onions in bottom of slow cooker. Sprinkle skirt steak with ¼ teaspoon each salt and pepper. Place on top of onions. Top with salsa, ONLY 1 tablespoon vinegar, ONLY ½ teaspoon oregano, garlic, and bay leaf. Pour in stock. Cover and cook on LOW setting 7 to 8 hours.

3. Shred steak with 2 forks.

4. Coarsely chop cilantro. Cut lime into wedges (optional). Crumble feta.

5. Char tortillas: Heat tortillas by placing directly over a gas burner or on a smoking hot cast-iron skillet until blackened in places on both sides. PLEASE don’t skip this step; you’ll be missing out on big flavor.

To Serve: Divide steak mixture evenly among tortillas. Top with cilantro and feta, and serve with a squeeze of lime juice (optional).
