What To Do:
1. Chicken may arrive slightly frozen. Thaw as needed.
2. Cook Rice: In a medium saucepan, over high heat, bring 1¼ cups water and ¼ teaspoon salt to a boil. Stir in rice and return to a boil. Reduce heat to low, cover and simmer 15 minutes. Turn off heat and let stand, covered for 5 minutes.
3. Prep Baking Sheet: Place an aluminum foil-lined baking sheet in the oven. Place baking sheet in oven, and preheat to 450°F. Remove pan from oven, and coat with cooking spray.
4. Bake Chicken: Melt butter in a shallow dish, and stir in 1 packet sriracha. Place Panko in a separate shallow dish. Dip chicken in butter mixture, and then dredge in Panko, pressing to coat. Place chicken on hot baking sheet, and sprinkle with ½ teaspoon salt. Bake 10 minutes or until chicken is done and breading is browned.
