Wine Pairings by @grapefriend

There’s lots of great spice in this dish so pair that with a Grecanico which has lemon and almond notes and a medium-light body.

Beer Pairings

This spicy dish is a match made in heaven with a hoppy and malty IPA.

2. Cook Rice: In a medium saucepan, over high heat, bring 1¼ cups water and ¼ teaspoon salt to a boil. Stir in rice and return to a boil. Reduce heat to low, cover and simmer 15 minutes. Turn off heat and let stand, covered for 5 minutes.

3. Prep Baking Sheet: Place an aluminum foil-lined baking sheet in the oven. Place baking sheet in oven, and preheat to 450°F. Remove pan from oven, and coat with cooking spray.

To Serve: Divide rice and chicken evenly between 2 serving plates or bowls. Drizzle chicken with sauce, and sprinkle with scallions.
