What To Do:

1. Preheat oven to 375°F. Line a baking sheet with foil or parchment and set aside.

2. Pickle Cucumber: Thinly slice cucumber and add to a bowl with ¼ teaspoon salt and vinegar. Toss to coat and set aside.

3. Sauté the Aromatics: In a medium sauté pan over medium-high heat, add sesame oil, garlic and all but 1 tablespoon of the scallions (reserve the rest for garnish). Cook, stirring, until fragrant (about 15 seconds). Pour into a large mixing bowl. Set pan aside.

4. Mix and Form Burgers: Into the bowl with the scallion mixture, stir in soy sauce, crushed red pepper, and almond butter. Add turkey and mix with your hands JUST until incorporated. Do not over mix (mixture will be very wet). Form into 4 equal-sized patties.

5. Cook Burgers: In the sauté pan, over medium heat add one teaspoon oil and the patties. Cook for 2 minutes on each side and remove to the foil-lined baking sheet. Finish in the oven until cooked through (about 8 minutes).

To Serve: Line the bottom of two plates with the leafy greens. Top each with burgers and finish with the quick-pickled cucumbers and a scallion scatter garnish.
