What To Do:
1. Preheat oven to 375°F. Line a baking sheet with foil or parchment and set aside.
2. Pickle Cucumber: Thinly slice cucumber and add to a bowl with ¼ teaspoon salt and vinegar. Toss to coat and set aside.
3. Sauté the Aromatics: In a medium sauté pan over medium-high heat, add sesame oil, garlic and all but 1 tablespoon of the scallions (reserve the rest for garnish). Cook, stirring, until fragrant (about 15 seconds). Pour into a large mixing bowl. Set pan aside.
