What To Do:

1. Preheat oven to 375° F. Line a baking sheet with foil.

2. Prep Brussels Sprouts: Trim and quarter the Brussels sprouts. Roughly chop parsley.

3. Roast Sprouts and Grapes: On the baking sheet, toss the Brussels sprouts and grapes with 1 tablespoon olive oil, garlic, shallots, 1 teaspoon salt and ½ teaspoon pepper. Spread evenly and roast until sprouts are tender and golden brown (about 20 minutes).

4. Remove from oven and stir in parsley and walnuts.

5. Cook Chicken: While sprouts are roasting, season chicken liberally with salt and pepper. Place a medium sauté pan over medium-high heat and add 1 teaspoon olive oil. Add chicken to pan and cook until browned on the bottom, turn, and continue to cook until chicken is cooked through (about 3-4 minutes per side).

To Serve:Place chicken on a platter and spoon roasted sprouts over.
