What To Do:

Vegetarian Tacos - Step 1

1. Cut lime in half. Cut one of the halves into quarters. Coarsely chop cilantro.

2. Char Tortillas: Please don’t skip this step!!! The extra char flavor will be a taco life changer. Place tortillas on hot grill or over a gas burner until char marks appear on both sides.

3. Cook Beans: In a sauté pan over medium-low heat, add 1 tablespoon oil. Stir in garlic, black beans, ½ teaspoon salt, ¼ teaspoon pepper and pinch of cumin if desired. Cook, stirring occasionally, for 3 minutes.

4. Finish Beans: Stir in corn, juice from half the lime and hot sauce (optional). Cook until heated through (about 2-3 minutes).

To Serve: Divide bean mixture between the tortillas and top each with feta, radish, and cilantro. Serve pico de gallo and lime wedges on the side.
