What To Do:
1. Prepare Couscous: In a medium
saucepan over medium heat, heat
1 teaspoon olive oil. Add half of garlic
and couscous; cook 1 minute or until
toasted. Add 1 cup water and ½ teaspoon
salt. Cover, reduce heat, and simmer
10 minutes or until liquid is absorbed.
Fluff with a fork.
2. Cook Chicken: Rub chicken with
2 teaspoons olive oil, and sprinkle with
¼ teaspoon each salt and pepper. Heat a
large nonstick skillet over medium-high
heat. Cook chicken 3 minutes on each
side or until juices run clear. Remove
chicken to a plate, and keep warm while
