What To Do:

Spicy Szechuan Noodles - Step 1

1. Make Sauce: Whisk together soy sauce, honey, vinegar, ONLY ½ teaspoon crushed red pepper, almond butter, and 2 tablespoons water in a small bowl.

2. Soften Noodles: Add noodles to a bowl or pot of boiling water and cook 2 to 2.5 minutes. Strain and run under cold water briefly to prevent overcooking.

3. Brown Beef and Bok Choy: Heat 1 teaspoon canola oil in a large nonstick skillet over medium-high heat. Add ground beef, ginger, garlic, and ¼ teaspoon each salt and pepper. Sauté 4 minutes until beef crumbles. Add bok choy. Cover and cook 3 minutes or until tender.

4. Finish Dish: Add noodles and sauce to beef mixture. Cook 2 minutes or until heated through. Stir in scallions.

To Serve: Divide noodles between two serving plates.

Serve this dish immediately. The noodles will soak up the sauce, so add additional water if needed.
