1. Cook Pork: Coat a 3- to 4-quart slow cooker with cooking spray. Rub pork with 1 tablespoon olive oil, cumin, oregano, ½ teaspoon salt, and ¼ teaspoon pepper. Place in slow cooker. Set aside half of cilantro. Top with onion, garlic, jalapeño and other half of cilantro, and ONLY 1 tablespoon lime juice. Cover and cook on LOW setting 5 to 6 hours.

2. Shred pork with two forks

3. Cook Rice: In a medium saucepan over high heat, bring 2½ cups water and ½ teaspoon salt to a boil. Stir in rice and return to a boil. Reduce heat to low, cover and simmer 25 minutes or until liquid is absorbed. Turn off heat and let stand, covered, for 5 minutes.

4. Prep Ingredients: Coarsely chop reserved cilantro. Stir into rice with remaining lime juice, and season with salt and pepper. Chop lettuce.

To Serve: Divide rice evenly between four serving bowls. Top with pork, lettuce, pinto beans, pico de gallo, cheese, and sour cream. Serve with sriracha.

Pro Tip:

Forget to start the slow cooker? Bypass it and grill the pork instead on an oiled grill pan 12 to 15 minutes, turning occasionally until pork is done.
