What To Do:

1. Prepare the Tomatoes: Bring a large saucepan of salt water to a boil. While the saucepan heats up, halve all grape tomatoes. Roughly chop parsley.

2. Marinate the Vegetables: In a large mixing bowl, add tomatoes, parsley, white beans, and honey balsamic dressing. Toss to coat. Season with salt and pepper. Set aside to marinate for at least 10 minutes and put to 2 hours.

3. Cook the Pasta: Add penne to the boiling water and cook until tender, about 10 minutes. Drain penne in colander, then return to the pot. Stir in tomato mixture. Grate or shave parmesan and stir half into pasta mixture. Save rest for garnish.

To Serve: Half avocado. Remove the pit, scoop out the flesh and dice. Divide pasta mixture between two bowls. Top each with avocado. Garnish with the remaining parmesan.
