What You Need:

  • - 1 tbsp Olive Oil
  • - Coarsely Ground Black Pepper
  • - Kosher Salt or Flake Sea Salt

What To Do:

1. Fill saucepan ¾ full with salted water. Place over high heat and bring to a boil.

2. Zest lemon and cut in half.

3. Cut ends off squash and discard. Grate all squash using large whole grater.

4. Add squash to boiling water and cook for 1 minute. Turn off heat and drain squash VERY WELL (press the squash in the colander with the back of the spatula to press out all of the water).

5. Return squash to the still warm pan and add goat cheese, lemon zest and juice from half of the lemon (use the other half of the lemon to brighten your nails, add zing to a salad or freshen your garbage disposal). Stir once and cover. Let sit covered for 2 minutes (don’t peek). Add ¼ teaspoon salt, ¼ teaspoon pepper and all but a 1 teaspoon of the dill stirring until all of the goat cheese has melted and the mixture is creamy. Cover and set aside.

6. In medium sauté pan over medium heat, add 1 tablespoon olive oil. When oil begins to shimmer add the tomatoes ¼ teaspoon salt and a pinch of pepper. Cook, moving around in the pan, JUST until tomatoes begin to blister (1-2 minutes). Remove from heat.

To Serve: Divide squash mixture between 2 bowls, mounding in the center of each bowl. Using the back of a spoon make a small well in the center of each mound. Divide the blistered tomatoes between the wells and sprinkle each with half of the remaining dill.
