1. Make rub: In a small mixing bowl, stir together the paprika, oregano, ¼ teaspoon red pepper flake, and 1/2 teaspoon each salt and pepper.

2. Season Steak: Rub steak with 2 teaspoons olive oil and season with rub. Grill 3 minutes per side or to desired doneness. Remove to a board and let rest while preparing the salad.

3. Grill Steaks: Heat a lightly oiled grill to high. Place steaks on the hot grill and cook 3 minutes per side or until desired doneness.

4. Prepare the salad: Coarsely chop the lettuce. Halve the tomatoes. Toss lettuce, tomatoes, and spinach in a medium mixing bowl.

5. Make the dressing: In a small mixing bowl, whisk together balsamic vinegar, Dijon mustard, garlic, 1 tablespoon olive oil, and ¼ teaspoon each salt and pepper.

To Serve: Divide salad between 2 plates. Drizzle with dressing. Slice the steak and place on top of the salad. Sprinkle with blue cheese.
