What To Do:

1. Place steak in freezer (trust us).

2. Cook Rice: In a small saucepan, over high heat, bring 1¼ cups water and ¼ teaspoon salt to a boil. Stir in rice and return to a boil. Reduce heat to low, cover and simmer 15 minutes. Turn off heat and let sit, covered for 5 minutes. Just before serving, stir in all but 2 tablespoons scallions (save the rest for garnish).

3. Make Sauce: While rice is cooking, in a small mixing bowl whisk together soy sauce, vinegar, honey, ONLY 1/4 teaspoon crushed red pepper, 1 teaspoon all-purpose flour, and 2 tablespoons water. Set aside.

4. Slice Steak: Remove steak from freezer and thinly slice against the grain; sprinkle slices with 1/4 teaspoon each salt and pepper. Heat 1 tablespoon canola oil in a large nonstick skillet over medium-high heat.

5. Cook Steak: Heat 1 tablespoon canola oil and sesame oil in a large nonstick skillet over medium-high heat. Cook steak, stirring frequently, until liquid is released and beef is browned (about 5 minutes). Remove from skillet and keep warm.

6. Steam Broccoli: Add broccoli, ginger, and garlic to skillet; sauté 1 minute. Add ½ cup water; cover and steam 5 minutes or until broccoli is crisp-tender.

7. Finish Dish: Add steak and sauce to the skillet with the broccoli. Cook, tossing, for 2 minutes.

To Serve: Serve beef and broccoli over rice and garnish with reserved scallions.
