Thai Grilled Chicken Salad - Step 1

1. Grill the Chicken: Heat a lightly oiled grill pan over medium heat. Sprinkle the chicken with ¼ teaspoon salt and 1/8 teaspoon pepper. Place chicken on the grill pan. Grill 5 to 6 minutes on each side or until done. Remove to a board and let rest while preparing the salad.

2. Prep salad ingredients: Coarsely chop the lettuce.

3. Make dressing: In a small mixing bowl, whisk together 2 tablespoons water, almond butter, sriracha, lime juice, ginger, garlic, honey, and soy sauce.

To Serve: Slice the chicken. Toss the lettuce, cabbage and carrot mix, jicama, and drizzle with dressing. Top with chicken, and sprinkle with peanuts.

Pro Tip:
