1. Soften noodles: Add noodles to a medium bowl or saucepan of boiling water and let stand 2 to 3 minutes. Drain, and rinse with cold water to prevent over-cooking.

2. Make sauce: While noodles cook, stir together soy sauce, brown sugar, vinegar, 1 tablespoon all-purpose flour, and 3 tablespoons cold water in a small bowl.

3. Stir-fry vegetables: Heat sesame oil and 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add stir-fry vegetables, mushrooms, and bok choy. Cover and cook 5 minutes. Uncover and cook 2 more minutes or until vegetables are tender, adding 2 to 3 tablespoons of water if necessary to prevent over-browning. Add noodles and sauce to vegetables in skillet. Cook 3 minutes or until sauce thickens.

To Serve: Divide noodles evenly between 2 serving bowls or plates.
