What To Do:

1. Cook Couscous: In a medium saucepan over medium heat, heat 1 teaspoon olive oil. Add couscous; cook 1 minute or until toasted. Add 1 cup water and ¼ teaspoon salt. Cover, reduce heat, and simmer 10 minutes or until liquid is absorbed. Fluff with a fork.

2. Make Marinade: Cut lemon in half. Cut one half of lemon into thin slices and set aside. Grate zest from remaining half and squeeze juice. Place in a small bowl and whisk in ONLY 1 teaspoon thyme, 2 tablespoons olive oil, and ½ teaspoon each salt and pepper.

3. Prepare Kabobs: Thread zucchini, squash, and red onion onto provided wooden skewers.

4. Prepare Fish Packets: Tear 2 large sheets of aluminum foil and coat with cooking spray. Divide couscous into the centers of each piece of foil. Place each piece of fish beside couscous. Top couscous with tomatoes, olives, and garlic. Sprinkle fish with ½ teaspoon each salt and pepper, ONLY 1 teaspoon oregano, and lemon slices. Drizzle with 1 tablespoon olive oil. Fold outsides of foil together to create a packet and seal tightly.

5. Grill Fish Packets and Kabobs: Heat a grill or grill pan to medium-high heat. Place packets on one side of pan. Brush the other side of pan with olive oil. Place kabobs on grill. Brush with half of marinade. Grill 4 minutes; turn and brush with marinade. Continue grilling 4 to 5 minutes longer or until kabobs are done and fish is cooked through.

To Serve: Remove fish, couscous, and tomatoes from packets to two serving plates. Serve with vegetable kabobs.
