1. Prep zucchini: Cut zucchini lengthwise into thin strips.

2. Cook orzo: Bring a medium saucepan of salted water to a boil. Add orzo. Cook 8 minutes or until al dente. Drain.

3. Make sauce: Chop parsley. Reserve 2 teaspoons to stir into orzo. Grate zest from lemon; cut lemon in half. Squeeze juice from one half of lemon. Cut remaining half into wedges. Stir together remaining parsley, lemon zest, lemon juice, capers, garlic, and 2 tablespoons olive oil in a small bowl. Season with salt and pepper to taste.

4. Grill fish and zucchini: Heat an oiled grill or grill pan over medium-high heat. Coat tilapia and zucchini lightly with olive oil and sprinkle with salt and pepper. Grill tilapia 2 to 3 minutes on each side or until fish flakes. Grill zucchini 3 to 4 minutes on each side or until tender.

To Serve: Stir reserved parsley into orzo. Divide orzo evenly between 2 plates. Top with tilapia and zucchini. Spoon sauce over the top, and serve with lemon wedges.

The parsley-caper sauce is also great served on grilled chicken, pork, other fish, or grilled vegetables.
