What To Do:
1. Cook fish: Lightly salt and pepper
both sides of cod. In a nonstick sauté
pan over medium-high heat, add 1
tablespoon canola oil. When oil begins
to shimmer, add cod (“skin” side down).
Cook, turning once, until cod is opaque
throughout and golden on the outside
(about 4 to 6 minutes per side).
2. Make dressing: While cod is cooking
make dressing and prep salad. Grate
zest from lime and squeeze juice. In a
medium mixing bowl, stir together lime
zest, ONLY half of lime juice, ONLY
¼ teaspoon cumin, and 2 tablespoons
