1. Make the Stock: Whisk together stock concentrate and 3¾ cups hot water until dissolved.

2. Coarsely chop the bacon.

3. Start the Soup: Cook bacon in a medium saucepan over medium-high heat 3 minutes or until fat begins to render. Add onion and 1 teaspoon oil. Sauté 5 minutes or until onion is tender. Add garlic, crushed red pepper, and collard greens. Sauté 3 minutes longer.

4. Finish the Soup: Pour in the stock, scraping the bottom of the pan with a wooden spoon to loosen browned bits. Stir in beans and vinegar. Bring to a boil, reduce heat, and simmer 10 minutes.

To Serve: Ladle soup into 2 serving bowls.

Pro Tip:

Make it Southern! Serve the soup ladled over a piece of cornbread to sop up the flavorful juices.
