1. Cook Rice: In a medium saucepan over high heat, bring 1¼ cups water and ¼ teaspoon salt to a boil. Stir in rice and return to a boil. Reduce heat to low, cover and simmer 15 minutes. Turn off heat and let stand, covered, for 5 minutes.

2. Make Sauce: In a small bowl, stir together honey, ONLY 1 tablespoon soy sauce, ONLY 1 tablespoon vinegar, and half of garlic.

3. Stir-fry Vegetables: Heat 2 teaspoons olive oil in a large nonstick skillet over medium-high heat. Add stir-fry vegetables, cabbage, and remaining garlic. Sauté 3 minutes. Add remaining 1 tablespoon soy sauce and 2 tablespoons water. Cover and cook 3 minutes. Uncover and cook 1 minute longer or until vegetables are crisp-tender. Season with salt and pepper to taste. Transfer vegetables to two serving plates and keep warm.

4. Cook Chicken: Sprinkle chicken with ½ teaspoon each salt and pepper. Heat 2 teaspoons olive oil and sesame oil in a large nonstick skillet (same skillet used for the vegetables) over medium-high heat. Brown chicken 2 to 3 minutes on each side. Add sauce from Step 2. Reduce heat to medium. Cover and cook 8 minutes. Uncover and cook 2 minutes longer or until sauce is syrupy. Season with salt and pepper to taste.

To Serve: Divide rice between serving plates. Top with chicken, drizzle with sauce in skillet, and sprinkle with sesame seeds.

Fluffing rice with a fork prevents it from becoming mushy.
