1. Make Sweet Potato Fries: Preheat oven to 425°F. Line a baking tray with aluminum foil and coat with cooking spray. Place sweet potato wedges on pan, toss with 1 tablespoon olive oil, and coat with cooking spray. Sprinkle with ¼ teaspoon each salt and pepper. Bake for 20 minutes, turning occasionally until browned and tender.

2. Make Balsamic Onions: Heat 1 tablespoon olive oil in a small skillet. Add onions; cover and cook 5 minutes or until softened. Add vinegar and 2 tablespoons water. Cover and cook 5 more minutes. Uncover and cook 2 minutes.

3. Shape ground beef into 2 patties.

4. Grill Burgers: Sprinkle burgers with ¼ teaspoon each salt and pepper. Heat an oiled grill or grill pan over medium-high heat. Grill 4 to 5 minutes on each side or to desired doneness. Top with blue cheese; cover and let stand until melted.

To Serve: Top each burger with onions and arugula. Drizzle arugula with a little olive oil. Serve with sweet potato fries.

Spice it Up!: Add some heat to the sweet potato fries, and toss them with ¼ teaspoon chipotle chile powder along with the salt and pepper.
