What To Do:

Mojo Tacos - Step 1

1. Sauté Onions: In a sauté pan over medium-high heat, add 1 tablespoon olive oil, onions and ¼ teaspoon salt. Cook, stirring, until onions just become limp. Remove from heat and add to a medium mixing bowl. Set aside.

2. Cook Steak: Lightly coat a grill pan with oil and place over high heat. In a small mixing bowl, stir together ½ of the cumin, ½ of the garlic, ½ the oregano, ½ teaspoon salt and ¼ teaspoon pepper. Rub mixture over both sides of steak. Add steak to the hot grill pan and cook 4 minutes per side, turning once. Remove to plate and allow to rest.

3. While Steak is Cooking, Make Mojo: Roughly chop the cilantro and add 2/3 of it (reserve the rest for a garnish) to the mixing bowl with the onions. Add 2 tablespoons olive oil, remaining cumin, crushed red pepper, oregano, remaining garlic, juice from lime, honey and ¼ teaspoon salt. Stir together.

4. Char Tortillas: Heat tortillas by placing directly over a gas burner or under a broiler until blackened in places on both sides. PLEASE don’t skip this step, you’ll be missing out on big flavor.

5. Chop Steak: Thinly slice steak and chop into small pieces. Add the chopped steak and all its juices to the Mojo Sauce. Toss to coat.

To Serve: Divide steak mixture between charred tortillas and garnish with remaining cilantro.
