1. Cook Rice: In a medium saucepan over high heat, bring 1¼ cups water and ¼ teaspoon salt to a boil. Stir in rice and return to a boil. Reduce heat to low, cover and simmer 25 minutes or until liquid is absorbed. Turn off heat and let stand, covered, for 5 minutes.

2. Make Strawberry-Cucumber Salad: Dice strawberries, cucumber, and avocado. Coarsely chop jalapeño and cilantro. In a medium bowl, stir together strawberries, cucumber, avocado, jalapeño, and half of cilantro. Gently stir in ONLY 1 tablespoon lime juice, 1 tablespoon olive oil, and salt and pepper to taste.

3. Make Glaze: Stir together honey and balsamic vinegar in a small bowl.

4. Grill Pork: Heat a grill pan over medium-high heat. Rub pork with 1 tablespoon olive oil, and sprinkle with ¼ teaspoon each salt and pepper. Grill 4 minutes on one side. Turn and brush with glaze. Grill 4 to 5 minutes longer, basting with glaze, until pork is done. Let rest 5 minutes before slicing. While pork is resting, stir remaining cilantro into rice.

To Serve: Divide rice evenly between two serving plates. Top with pork slices and strawberry-cucumber salad. Season with salt and pepper to taste.
