Happy Chicken Salad Bowl - Step 1

1. Cook Quinoa In a medium sauce pan, over medium-high heat, add 1 teaspoon of olive oil and the quinoa. Cook, stirring, for 1 minute. Add 2 cups water and ½ teaspoon salt to the pan. Bring to a rolling boil. Reduce heat to low and cook, covered for 15 minutes. Remove pot from heat and let stand, COVERED, for 5 minutes. don’t lift the lid! Fluff the quinoa gently with a fork. (note: If any liquid remains in the bottom of the pan or if the quinoa is still a bit crunchy don’t worry, just return the pot to low heat and cook, covered, for another 5 minutes, until all the water has been absorbed.)

2. Cook Chicken:
While quinoa is cooking, liberally salt and pepper chicken. Brush 1 teaspoon olive oil on a grill pan and heat to high. Add the chicken to the pan and grill, turning once, until cooked through (5-6 minutes per side). Remove from heat and allow to rest 5 minutes before slicing.

3. Make Dressing: Cut lemon in half. In a blender, combine scallions, mint, juice from the lemon, 2 tablespoons olive oil, 1 teaspoon salt and Π teaspoon pepper. Blend until smooth.

4. Mix Salad: To a large mixing bowl add spinach, mango and blueberry mix and quinoa. Pour dressing over and toss to coat. Or, serve dressing on the side.

To Serve:
Divide the happy quinoa salad between two bowls and top with sliced chicken.
