TK Table Talk:

If you and your parents switched places for a day, what are the first things you would do?

What To Do:

Grilled Avocado and Turkey Tacos with Blueberry-Corn Salsa - Step 1

1. Cook turkey: Heat 1 teaspoon olive oil in a large skillet. Add ground turkey, cumin, ONLY 1 teaspoon chili powder, ½ teaspoon salt, ¼ teaspoon pepper, and ONLY half of garlic.

2. Prep ingredients: Halve, pit, and peel avocados. Coarsely chop blueberries, jalapeño, and cilantro.

3. Grill avocados:Heat a grill or grill pan over medium-high heat. Drizzle cut sides of avocados with 1 tablespoon olive oil. Sprinkle with remaining chili powder, and ¼ teaspoon each salt and pepper. Place avocados, cut sides down, on grill (or a very hot skillet). Grill avocado 2 to 3 minutes or until grill marks appear. Remove from grill, and thinly slice.

4. Make salsa: Combine blueberries, corn, remaining garlic, ONLY 1 tablespoon lime juice, 2 tablespoons olive oil, jalapeño, cilantro, ½ teaspoon salt, and ¼ teaspoon pepper in a medium bowl.

5. Char tortillas: Heat tortillas by placing directly over a gas burner or under a broiler until blackened in places on both sides. PLEASE don’t skip this step, you’ll be missing out on big flavor.

To Serve: Divide turkey evenly between tortillas. Top with salsa and sliced avocado.

Pro Tip:

Let the salsa stand 30 minutes or longer for even more flavor.

Sure, our TK food containers are recyclable, but we’d rather you upcycle them first. We’re partial to using them to sprout our garden seeds, but we’d love to see how creative you are! Tag us in your photos. #tklife
