What To Do:

1. Cook bacon: Chop bacon. Cook in a large skillet over medium heat 5 to 6 minutes or until crisp.

2. Make avocado topping: Dice avocado. Set aside a few cilantro leaves, and chop remaining cilantro and jalapeño. Toss together avocado, cilantro, jalapeño, 1 teaspoon olive oil, and ONLY 1 tablespoon lime juice in a small bowl. Season with salt and pepper to taste.

3. Finish filling: Add garlic, cumin, and black beans to bacon. Stir in remaining lime juice and pico de gallo. Season with salt and pepper to taste.

4. Char tortillas: Heat tortillas by placing directly over a gas burner or under a broiler until blackened in places on both sides. PLEASE don’t skip this step, you’ll be missing out on big flavor.

To Serve: Divide bacon-black bean filling evenly between tortillas. Top with avocado mixture. Garnish with reserved cilantro leaves.

Freeze the bacon for 30 minutes to make it easier to chop.
