1. Cook Rice: In a medium saucepan over high heat, bring 1¼ cups water and ¼ teaspoon salt to a boil. Stir in rice and return to a boil. Reduce heat to low, cover and simmer 25 minutes or until liquid is absorbed. Turn off heat and let stand, covered, for 5 minutes. Coarsely chop cilantro. Stir ONLY half into rice.

2. Cook Black Beans: Heat 1 teaspoon olive oil in a saucepan. Add garlic and bell pepper. Sauté 1 minute. Add chicken stock concentrate, ½ cup water, black beans, ONLY ½ teaspoon cumin, ONLY ½ teaspoon coriander, and ¼ teaspoon each salt and pepper. Simmer 5 minutes.

3. Make Spice Rub Stir together remaining cumin, oregano, ONLY ½ teaspoon coriander, ¼ teaspoon each salt and pepper, and ONLY ¼ teaspoon crushed red pepper.

4. Prep Pork: Rub pork tenderloin lightly with olive oil and spice rub.

5. Grill Pork, Pineapple, and Shallots: Heat an oiled grill or grill pan over medium-high heat. Add pork. Grill 10 to 12 minutes, turning occasionally, until pork is done. Place pineapple and shallots on grill pan. Grill 3 to 4 minutes or until charred.

To Serve: Thinly slice pork. Chop pineapple and shallots; stir in remaining cilantro, and season with salt and pepper to taste. Divide rice, beans, pork, and salsa between serving plates.
