What To Do:

1. Cook Pasta: In a medium sauce pan over medium-high heat, add water and 2 teaspoons salt. Bring to a boil. Stir in orzo and boil, stirring occasionally, until al dente (about 6 minutes). Drain pasta and return to the pot. Stir in 2 teaspoons olive oil, cover and set aside.

2. Cook Ground Chuck: While orzo is cooking, add the ground chuck to a medium sauté pan over medium-high heat. Liberally salt and pepper. Cook, breaking up with a spatula, until cooked through and just beginning to brown. Using a slotted spoon, remove ground chuck to a bowl and set aside. Remove all but 1 tablespoon of the renderings from the skillet.

3. Sauté Leeks: Chop the leeks. Place the pan with the renderings over mediumhigh heat and add leeks. Cook, stirring, for 1 minute. Stir the leeks into the orzo.

4. Chop Dill: Finely chop dill. Reserve 1 teaspoon for garnish.

5. Finish Pasta: Place the pot of orzo over medium heat. Stir in heavy cream, crumbled feta, dill, ground chuck, Π teaspoon salt and Σ teaspoon pepper. Cook, folding gently, for 1 minute.

6. Wilt Spinach: Fold spinach into hot pasta mixture and allow to wilt for 30 seconds, fold again.

To Serve: Divide mixture between two bowls and garnish with reserved dill.
