Chicken Souvlaki Bowl - Step 1

1. Cook pasta: In a medium sauce pan over medium-high heat, add water and 2 teaspoons salt. Bring to a boil. Stir in orzo, and boil, stirring occasionally, until al dente (about 6 minutes). Drain orzo with a fine mesh strainer.

2. Mix dressing: While pasta is cooking; in a small mixing bowl, whisk together 3 tablespoons oil, 1½ tablespoons vinegar, garlic, ½ teaspoon oregano (save the rest for another use).

3. Season Chicken: Measure out 1 tablespoon dressing and toss with chicken tenders. Sprinkle chicken with ¼ teaspoon each salt and pepper.

4. Cook Chicken: Place a lightly oiled grill pan over medium-high heat. Grill chicken 2 to 3 minutes on each side or until done.

5. Halve tomatoes and olives. Crumble feta.

6. Finish bowl: Stir in ¼ teaspoon each salt and pepper to remaining dressing. Toss orzo and spinach separately with remaining dressing.

To Serve: Arrange all ingredients in 2 serving bowls.

Pro Tip:

This dish is perfect to make and take. Just don’t dress the spinach and toss it in at the very end.
