What To Do:

1. Cook Rice: In a medium saucepan, over high heat, bring 1¼ cups water and ¼ teaspoon salt to a boil. Stir in rice and return to a boil. Reduce heat to low, cover and simmer 15 minutes. Turn off heat and let stand, covered for 5 minutes.

2. Prep Baking Sheet: Place an aluminum foil-lined baking sheet in the oven. Place baking sheet in oven, and preheat to 450°F. Remove pan from oven, and coat with cooking spray.

3. Bake Chicken: Melt butter in a shallow dish, and stir in 1 packet sriracha. Place Panko in a separate shallow dish. Dip chicken in butter mixture, and then dredge in Panko, pressing to coat. Place chicken on hot baking sheet, and sprinkle with ½ teaspoon salt. Bake 10 minutes or until chicken is done and breading is browned.

4. Make Sauce: Stir together mayonnaise, honey, and remaining 1 packet sriracha in a small bowl.

5. Finish Rice: Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add broccoli and ¼ cup water. Cover and steam 3 minutes. Uncover and cook 1 minute longer or until liquid evaporates and broccoli is tender. Stir in rice and soy sauce. Sauté 1 minute.

To Serve: Divide rice and chicken evenly between 2 serving plates or bowls. Drizzle chicken with sauce, and sprinkle with scallions.
