What To Do:

1. Preheat oven: to 425°F. Line a rimmed baking sheet with aluminum foil and coat with cooking spray.

2. Prep the Chicken: Sprinkle the chicken with ¼ teaspoon each salt and pepper, ONLY 1 teaspoon paprika, and ONLY 1 teaspoon chili powder. Wrap each chicken breast tightly with 2 bacon slices (ends on the underside of the breast).

3. Prep the Vegetables: Toss the vegetables with honey, 1 tablespoon oil, and ¼ teaspoon each salt and pepper on prepared baking sheet and put in the oven to roast.

4. Brown the Chicken: In a cast-iron or oven-proof skillet over medium heat, add ½ tablespoon oil. Add the chicken and sear 2 minutes on each side.

5. Bake the Chicken: Place skillet with chicken in oven. Bake 15 minutes. Remove vegetables and add pecan pieces. Cook 3 minutes longer, until chicken is done and vegetables are browned and tender. Remove chicken to a board and rest 5 minutes before slicing.

To Serve: Coarsely chop parsley and toss with vegetables. Divide between 2 plates and serve with sliced chicken.

Pro Tip:

To seal the bacon around the chicken, sear with the seam side down first.
